Soup: Roasted Golden Beet Soup with Beet Green Drizzle
This is a recipe that I made in one of my in-person classes pre pandemic! If you are not a huge fan of beets, it might not sound appetizing, but, the roasted golden beets along with onion, ginger, lemon and turmeric make for an amazing tasting soup. Those in my class all said that it was the one dish they were most surprised about loving!
