Creamy Avocado Chickpea Salad

I saw a recipe for an avocado chickpea salad online and it got me thinking. I used what I had in the house to get it started. I tasted it and it was bland and boring. I went to my spice drawer and decided that I was in the mood for Cumin. Jackpot! This turned out to be a new favorite for lunch, picnics or as a side with burgers. Try it, you won’t be disappointed!

Ingredients:

1 can chickpeas

1 ripe avocado

1 scallion (green and white parts), chopped

2 stalks celery, chopped

ground cumin

ground garlic

kosher salt

pepper

Directions:

  1. Gently mash chickpeas in a bowl leaving about half whole and half mashed

  2. Split avocado in half, removing the pit. Score each side down to the skin, creating a crisscross pattern in the avocado

  3. Spoon avocado chunks out into mashed chickpeas

  4. Add scallion and celery, stirring to combine until the avocado coats the chickpeas.

  5. Add cumin, garlic, salt and pepper to taste
