Molten Chocolate Lava Cake

This recipe began with a private client who wanted to learn how to make dairy free molten chocolate cakes at home. Of course, in order to test the recipe, I needed to make it GF, yet also know that it would work with a standard wheat flour. What came out of this process is one of my husbands very favorite desserts! It also became the extra content for our healthy desserts class! I love to serve it in a variety of ways. Sometimes with simple powdered sugar, fresh berries and a scoop of dairy free ice cream, other times with my drizzly coconut caramel sauce, or even a simple strawberry sauce! No matter how you serve it, it is delicious!
