Grilled Peaches with Balsamic Glaze

If you are looking for a quick and super easy dessert to satisfy your sweet tooth in the summer, this is it! Use whatever fruit you have on hand: plums, pineapple, mango, nectarines are all just as delicious as the peaches. Just make sure that your fruit is nice and ripe! It looks elegant, and tastes amazing!

Ingredients:

4 peaches, halved and pitted

1 cup balsamic vinegar

1 Tbsp. raw, organic honey

salt and freshly ground pepper to taste

avocado oil

vanilla or cinnamon ice cream optional (I like Nada Moo - non dairy)

Directions:

  1. Put the vinegar in a small saucepan and bring it to a simmer over medium high heat. Cook until syrupy, about 10-15 minutes. It will have reduced to 1/4-1/3 cup and will leave a thick coating on the pan when swirled. Remove from heat. Stir in the honey and salt/pepper to taste. Set aside to cool. It will thicken more as it cools.

  2. Brush the peach halves with avocado oil and season lightly with salt. Place on the hot grill, cut side down and grill until golden brown. For cross-hatches, turn peaches 90 degrees half way through. Wen done, turn over and grill peaches for 1 minute longer skin side down.

  3. Remove peaches from the grill. Serve two warm peach halves with a scoop of ice cream (optional) and drizzle it all with the balsamic glaze.
