Wild Mushroom Soup with Truffle Oil

Last year at this time I was teaching in person cooking classes out of my kitchen. Last November, I taught a class on some of my favorite Thanksgiving side dishes. It was probably my most popular class and this was the most loved dish from that class! I began making this recipe based on Anthony Bourdain’s Mushroom Soup a few years ago. It quickly became a staple at my Thanksgiving dinner table, and for that matter, all fall! It is creamy, delicious and loaded with amazing nutrients from the mushrooms. The fact that it has no gluten or dairy is just an added bonus.
