Summer Ceviche

Every time I go to Mexico, I seem to eat my weight in ceviche. I love it in all of its forms! I had not yet made it at home until very recently. My husband and I were reminiscing with friends who had recently traveled with us to Mexico about the ceviche. I promised to bring it next time we got together. Well, I did it and it was amazing! So delicious and refreshing on a hot summer evening. Now that I have begun making it at home and know how easy it is, I won’t be stopping any time soon! I hope you enjoy it as much as I do!
