Miso - Ingredient Roulette

This was the Ingredient Roulette choice for October - 2020! Miso is a wonderful ingredient that can be used in almost anything. I love to use it in salad dressings and sauces since it acts as an emulsifier, or in most any recipe where you are looking for a little “umami”. There are various varieties of miso. White/yellow are the mildest. They impart a slightly sweet, slightly salty flavor to your dish. If you avoid soy, there is also a chickpea variety which also has a very mild flavor. The darker your miso, generally means that it has been allowed to ferment for a longer time and will have a stronger flavor. I love to use red miso in tomato based sauces or even in meatloaf!
